Its creation involved a meticulous three-phase selective harvest, overnight maceration on the skins, fermentation with indigenous yeasts using free-run juice without pressing, aging in oak barrels from various coopers, multiple fine lees stirrings, and careful barrel selection. All of these steps have made this one of our flagship dry wines and a hallmark of our winery.
